It almost here!! In a few days we can officially say summer in here. And what goes better with summer then salad and a patio?

It’s totally convenient how our bodies naturally crave cooler foods in the summer. But that doesn’t mean you can’t include some roasted veggies in your garden bowl.

Beets might not be your go to when you think of salad but they are such a great root vegetable. For one, beets can aid digestion. They can also have a cleansing effect on the liver. Interestingly enough, cooking beets makes their mineral content more concentrated but the same process lower the quality of the vitamins they contain.

This salad already packs a great combination of flavour but we can’t have a plain chicken, can we?! If you are a fan of beets already you know that dill is a great herb to pair with them. I highly recommend some fresh dill to season your chicken but dried dill will also work!

So now that you have the perfect lunch recipe, go enjoy it on your patio and don’t forget that glass of white sangria to go with it.
