Yesterday’s blog post was all about the benefits of antioxidants for the flu season which is upon us, but also for fertility support. If you haven’t had a chance to check it out already, you can here. Like I promised, here’s an easy recipe to include some antioxidants in your menu to help keep you healthy this winter.

Since I want to make this dish a powerhouse of antioxidants, we used a few items that have a high content. The base of mixed greens is one of them but could easily be replaced by any leafy greens. As I have mentioned in a previous post, the darker greens will also give you an added source of folate which is a good nutrient to stock up on in the pre conception period. Grapefruits are high in numerous nutrients but the vitamin C rich content is the main focus for this fertility/ flu support salad.

Speaking of fertility support, I had to add the avocado for its great source of monounsaturated fats. These fats are very useful with fertility support since they play a role in estrogen production and reproductive hormonal balance. Added bonus, it’s also packed of antioxidants that benefit the immune system.

I used walnuts for toppings since they also have some perks for fertility support. They are a good source of omega 3 fats and vitamin E which are both helpful for endometrial health and have also shown to benefit sperm quality.

I topped it all with some red onion, feta and a citrus vinaigrette. And there you have it! A light and colorful antioxidant salad that can benefit both your immune system and your reproductive system.

Grapefruit and greens

Fresh salad rich in antioxidants.

Ingredients

  • 2 handful mixed greens
  • 1 grapefruit
  • 1/2 red onion
  • 2 tbsp walnuts
  • 1 avocado
  • 2 tbsp feta cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp dijon mustard

Instructions

  • Mix together olive oil, lemon juice and mustard then set aside
  • Peel grapefruits and either separate quarters and cut in half or cut slices of the whole fruit.
  • Slice red onion thin and cut up the avocado.
  • Take the mixed greens and toss in dressing. Separate between 2 plates.
  • Separate the avocado, red onion and grapefruit between each plate.
  • Top with crumbled feta and walnuts.
